Countdown to Thanksgiving: How to Make a Perfect Pie Crust From Scratch

Bookmark and Share

We just received an email from a wonderful reader who was searching our archived posts for our instructions on “How to Make A perfect Pie Crust.” In case you might find this helpful in your Thanksgiving preparations too, we are reposting this for all (be sure to tell us what kind of pie you make ~ we’d love to drool!).

As we countdown to Thanksgiving, we are reminded deeply of our many blessings, and that includes each of you ~ we are soooo thankful for you!

Enjoy and Bon Appétit y’all!  :)

A few years ago, I started making homemade pies to share with family and friends at the holidays. After trial and error, I have burned a few pies honed my skills on both savory and sweet pies and even watched a video on YouTube to learn how to make a lattice topped pie crust (it really is easier than it looks).  It is so satisfying to see the bubbling filling and golden brown crust of a pie come out of the oven ~ always a crowd pleaser!

Be sure to scroll to the bottom of this post to download the 99 cent Gooseberry Patch Savory Pies Cookbook.

10 Tips for Making a Perfect Crust for Any Pie

Store bought crusts are always a time-saver, but if you want a blue-ribbon pie, you need to make your crust from scratch.  It’s really not hard, and the results are fabulous when you use these tips:

1.  Start with a no-fail pie crust recipe. This recipe for Butter Flaky Pie Crust (allrecipes.com) is a favorite and will probably make you decide to never use shortening or margarine again in your baking.  The instructions are pretty easy to follow, too.

2.  Use very cold fresh butter. For the flakiest dough, chill the butter really well and cut into small pieces.  This helps keeps the butter from being over-worked when mixing the butter into the dough. If your kitchen is hot, chill the other ingredients and freeze the butter for 10 to 15 minutes before you mix it into the dough.

3. Make sure the butter is visible in the dough.  While many recipes call for you to work the butter into the flour until it resembles cornmeal, you should still see a few larger chunks of butter within the dough to insure optimum flakiness. You can use a fork, but cutting the butter into the dough is easiest when you use a pastry blender.

4. Limit the water in the recipe. Use just enough cold water so that the dough holds together when pinched.  Start with the smallest amount of water or liquid called for in the recipe. If the dough doesn’t hold together, add water by the teaspoon until it holds together.

5. Gently pat the dough into a 1″ thick round disk and chill.  Chill the dough disk at least 30 minutes before rolling.  Again, if your kitchen is warm, freeze the dough for 10 minutes to get it really cold before you start to roll it out.

6. Roll and turn the dough.  Use a floured rolling-pin to roll out the dough on a very well-floured work surface. After each roll of the pin, turn the dough 90 degrees to help prevent the dough from sticking. If the dough starts to stick to the rolling-pin or surface, re-flour the rolling-pin and/or the surface underneath the dough.

7. Roll with even pressure on the dough.  Keep the pressure of the rolling-pin even across the dough so that the edges are as thick as the center of the dough. Roll the dough out and away from yourself until the dough is evenly thick.

8. Brush milk or egg wash on the pie base and top.
Brush the bottom crust with milk or egg white with a pastry brush (before adding the filling) to prevent the crust from getting soggy during baking.  Brush the top crust with the milk or egg wash to get a golden hue (to avoid burning, be careful not to wash the edge of the crust with the egg/milk).

9.  Avoid burning the crust by covering the pie edge with aluminum foil or a pie shield  (see below list of tools).
Place aluminum foil strips or a pie shield (much easier than foil) around the edges of the pie before baking. Be sure to remove the foil or pie shield during the last 15 minutes of baking so the edge browns as well.

10. Place your pie plate on a baking sheet or jelly roll pan.
The baking sheet helps brown the bottom crust evenly, makes it easier to remove the pie from the oven, and catches any pie filling that might spill.

My Favorite kitchen Tools for Making Pie Crusts:

Adjustable Pie Shield ~ love this for preventing burnt edges.

Adjustable rolling-pin
~ Evenly flattens dough and makes a uniform pie crust (also great for making cookie dough for cut-out cookies).

Ceramic Pie Plate ~Professional bakers recommend ceramic for pie plates since it absorbs and distributes heat evenly and bakes a crisper crust.  It really does make a difference in results!

Pastry blender ~ Mixes and cuts cold butter into flour quickly.

Pastry brush ~ Useful for brushing excess flour off
of dough and for applying egg wash.

99 cent pie cookbook ~ For a short time, you can get a 99 cent download of the Gooseberry Patch – 25 Savory Pie Recipes cookbook. For dessert pies you might want to check out Martha Stewart’s New Pies and Tarts cookbook.

Bookmark and Share

A little reminder: our favorite Ladies Designer Brand Warehouse Sale starts the next week! This huge, direct from the designer warehouse clothing sale only happens 4 times a year and runs for 3 days (Thursday, Nov. 15 through Saturday, Nov. 17). Everything in the sale will be marked down 50% to 75% OFF retail. They have sizes to fit just about anyone ~ from Petite to Women’s sizes and everything in between.

Here’s a sneak preview of our visit…

A few days ago, I jaunted to Dallas to get a peek at the sale and take some pictures for our readers. The fall warehouse sale is packed full of rows and rows of gorgeous fall and transition-to-winter fashion bargains.  I love the texture and colors featured throughout this year’s collection ~ bright, but definitely fall season.

Some of my favorite finds were the “Texas-weight” jackets (for those crisp, but not-cold-enough-for-gloves days),  Tru Luxe Jeans at 50% off retail, and the oh-so-fashionable (and figure forgiving) ponchos in lots of styles.  I especially love all the attention to detail in these high-end department store quality fashions.

Check out the fabulous button details on the tailored blue jean
jacket sleeves above (love!).  The finishing on the inside with the
plaid piping on the seams adds fun pizzazz, too.

The November 15-17 sale will feature thousands of discounted items from Sharon Young, Multiples, City Girl, Tru Luxe, and more  designer brands at big discounts. Prices start at $20 and the most expensive items (dresses and jackets) are $60.

In a nutshell, here’s what you will find at the sale:

  • Over 18,000 gorgeous ladies clothing pieces, 50 to 75% OFF retail.  There is a huge selection that covers a wide variety of styles from trendy to traditional and from casual to dressy.  These are gorgeous top designer quality collections carried in high-end department stores and fashion boutiques ~ you’ll find them at this designer warehouse sale at a fabulous discount.

COUNTDOWN TO THANKSGIVING: FREE Dinner Table Placesetting Printable For Kids

Bookmark and Share

Just in time for the entertaining season ahead, here’s a fun & FREE printable tool from Martha Stewart to teach your children how to correctly set the table.  If you are like me, daily dinners at home rarely include a table formally set with all the various forks, glasses, etc.  With the entertaining season almost here, now is the perfect time to teach your kids table setting skills, so that they can take part in the preparations for all the upcoming festivities.

:: Go here to download and print this FREE colorful learning tool. Print the file on heavy paper or cardstock and cut out the pieces. You may even want to laminate before cutting to make the pieces extra sturdy for little hands.

:: Go here to print out the diagram below to get them started.

P.S.  If you need a refresher on which fork goes where for your next soirée or BBQ buffet, Replacements, Etc. has a handy & free guide for correctly setting the table for just about any type of meal.  Just follow the link here and you’ll be “Emily Post Etiquette” approved!

SAVE THE DATE: November 15-17 ~ Sharon Young & Ladies Designer Brand Warehouse Clothing Sale

Bookmark and Share

Woo-hoo! It’s almost time for our favorite clothing warehouse sale…

Need to update or add a few new pieces to your wardrobe?
Be sure to mark the next Sharon Young and Ladies Designer Brand Warehouse sale (November 15-17) on your calendar. The sale will feature 1000s of items from their fall clothing collection at big discounts ~ definitely worth the drive to Dallas!

If you have followed the blog for a while, you likely already know what big fans we are of this sale.  Personally, I have saved a bundle off retail prices (50 to 75% OFF) and brought home some gorgeous outfits at below wholesale ~ much of my wardrobe has come from this sale’s clothes racks. Prices start at $20 and the most expensive items (dresses and jackets) are $60!

We will be popping over to Dallas to capture some sneak preview pictures of the goodies this week, so stay tuned for a future post and more info in the coming days. Until then, you can take a peek at the company websites to get a glimpse of some of the clothing brands you will find:

Details, details
When: November 15-17, 2012 ~ Thursday & Friday, 8:00AM to 8:00PM and Saturday, 8:00AM to 5:00PM
Where: 10367 Brockwood Rd ~ Dallas.  You’ll see signs directing you where to go (or just follow all the ladies you will see!)
Do note: There is a large dressing room provided for trying on all your finds, but typical of women’s fashion warehouse sales, it is ladies only and not private. Since this is a women only event, husbands, guy-friends and kiddos under 12, please stay comfortable at home.

Enjoy and Share! :)
